Fresh soy milk
Fresh soy milk is so delicious; store-bought ones can't even compare with those homemade.
This delicious recipe is adapted from SPICEBOX KITCHEN @spiceboxtravels Linda's cookbook. I love this beautiful cookbook very much; if you want healthy, delicious recipes, I suggest you to check it out.
Ingredients:
1 cup dried soybeans
6 cups filtered water + more for soaking and rinsing
Instructions:
Place soybeans in a large bowl
Add filtered water
Soak it overnight
Drain and rinse soaked soybeans
Place soaked soybeans into a high-speed blender
Add 6 cups of filtered water
Blend until smooth
Strain through a nut milk bag (or cheese-cloth-lined sieve), squeeze, and press to extract all the milk
Pour the raw soy milk into a pot
Heat it over low to medium heat, bring it to a boil (skim off foam, using a mesh skimmer)
Turn to low heat, simmer for about 20 minutes (keep stirring during the process)
Enjoy!
Drink it hot or keep it in the fridge!
