Asparagus with creamy lemon balm sauce
Asparagus is a member of the lily family; it is relatively rich in protein, low in carbohydrates and calories compared to other vegetables. One cup of asparagus has 24 calories, almost half of which comes from protein. Asparagus has an excellent source of vitamin K, C, A, riboflavin, thiamin, vitamin B6, folic acid, and potassium. Asparagus is also a very good source of dietary fiber.
Recipe:
Ingredients:
a bunch of asparagus
1-2 TBS olive oil
salt to taste
Ingredients:
Sauce:
1/3 pack (133g) silken tofu
asparagus scrapings (blanch with the asparagus, then transfer into ice-cold water)
1 tsp garlic powder
1 tsp onion powder
1/4 cup extra virgin olive oil
salt to taste
11 leaves (approx) lemon balm
To prepare the sauce:
blend all the sauce ingredients *
*I used a high-speed blender to blend. However, I needed to double the ingredients; with the amount on this recipe it's better to use an immersion blender
To prepare the asparagus:
cut off the woody stems
peel the bottom of the stems
bring a pot of water to boil
add salt blanch for a few minutes (depends on the thickness of your asparagus)
transfer into ice-cold water
add olive oil to the blanched asparagus
On a plate:
add the blended sauce
place the asparagus on top
sear the asparagus with a blow torch
add fresh green onion flowers, cilantro flowers, and seeds
