Creamy vegan matcha popsicles

Creamy Vegan Matcha popsicles to beat the summer heat! 

This is super matcha-rich , the quality of the matcha affects the taste and the color.

Recipe: 

125 g cashew

1/3 pack of (397g) silken tofu

1 cup of cashew milk 

1/2 tsp vanilla extract

1/4 cup coconut oil

3 TBS matcha powder ( I used @threeteabowls matcha for sweets to get the vibrant color) 

1/4 cup maple syrup (feel free to add more if you have a sweet tooth, this is not as sweet as store-bought)

1.5 TBS nigori sake 


Directions: 

Soak the cashews in filtered water for 2-3 hours

Blend cashews (drained), tofu, cashew milk, vanilla powder, coconut oil (warmed in liquid form), matcha powder, maple syrup, nigori sake in a blender until smooth

Transfer the mixture into popsicle molds 

Store in the freezer until frozen
