Easy vegan cheese recipe for holiday celebrations
Easy vegan cheese recipe with fresh homegrown herbs, no fermentation required.
Ingredients:
3 cups of cashew, soaked and strained (I usually soak for about 3 hours)
1/4 cup nutritional yeast
Juice of 2 lemons
Zest of 1 lemon
1/2 cup fresh oregano leaves
1/4 cup basil leaves
4-5 sprigs of fresh thyme (stripped)
1 green onion
Few leaves of parley
1 TBS of extra virgin olive oil

Instructions:
Blend all the ingredients in a food processor., blend until smooth.
Enjoy!
