Creamy vegan matcha cheese cake
Recipe:
Ingredients:
Crust:
0.75 cup almond flour
0.25 cup walnut
1 TBS maple syrup
2.5 medijool dates, pitted
1 tsp vanilla extract
1 tsp maca powder
Top:
1.5 cup raw cashews, soaked and strained (soak for 3 hours or more)
1/2 can coconut cream ( I used @traderjoes )
1/4 cup maple syrup
1 tsp vanilla extract
2-4 tsp high quality matcha powder ( I use @threeteabowls matcha for latte)
Instructions:
Crust:
Put all the crust ingredients into a food processor, mix well
Transfer to a 5” springform pan, press until even and flat
Put it into the freezer
Top:
Put all the other (Top) ingredients into a blender
Blend until smooth and creamy
Pour the remaining mixture over the crust
Freeze for 5-6 hours or overnight
Leave it out at room temperature for about 5 mins, before serving
