Beautiful microgreens
Microgreens are about 1-3 inches tall. They are the young seedlings of edible herbs and vegetables; usually harvested in about 14 days after germination. According to the researcher Qin Wang, PhD, assistant professor at the University of Maryland in College Park, the microgreens were found to have 4- 40-fold more concentrated nutrients than their mature counterparts. Most of them are high in vitamin K, C, E, lutein and beta-carotene.

Grapefruit Microgreens Seaweeds Salad
Benefits of Grapefruit
Grapefruits are low in calories and packed with nutrients. It is an excellent source of vitamins A and C. According to Harvard Medical Schools, grapefruit has a low GI of 25, which does not significantly affect insulin and blood sugar level. It supports healthy skin and may help with weight loss. A study from UC Berkeley showed that it could lower blood glucose levels and improve insulin tolerance.
Ingredients:
Salad Dressing:
2.0 TBS chickpea miso
3 TBS filtered water
1 TBS lime juice
1.5 TBS tahini
1 tsp toasted sesame oil
1 tsp maple syrup
Salad:
1 grapefruit pulps (reserve the juice)
handful of micro greens
half bell pepper (diced)
3 tbs red onions (chopped)
25g dried mixed seaweeds (soaked and drained)
1 tsp toasted sesame seeds
Instructions:
Salad dressing:
In a mixing bowl, whisk to combine chickpea miso, tahini, filtered water, reserved grapefruit juice, and lime juice
Stream in sesame oil and maple syrup while mixing
Feel free to taste and adjust seasonings as needed.
Salad:
Put all the ingredients in a mixing bowl
Add dressing
Mix well
