Garden vegan pad thai
Dear Eggplant readers,
Eggplant Elaine has just moved! The house remodeling project has been crazily long and stressful, as we didn't hire an interior designer and thought we could do it ourselves, ended up may be a big mistake. We have been through so much difficulty during the process, well...finally it's almost done. One thing I enjoy the most ever since I moved into the house is Gardening! I love it so much; I often feel lost in time when I am in my garden, being close to nature always makes me happy.
Serving: 1
Toppings:
Random homegrown veggies, minced herbs and edible flowers, gomasio
Sauce:
2 tbs tahini
1.0 tbs tamari or more to taste
1 tbs fresh lemon + lime juice
1/2 tsp garlic powder
dash of cayenne pepper powder
1/4 tsp fresh grated ginger
1 tbs sesame oil/walnut oil/ flax seed oil
1 tsp of maple syrup or date syrup
1.0-1.5 tbs filtered water
Pad Thai
about 2-3 oz of dried pad thai ( I used lotus food forbidden pad thai )
bring water to boil in a pot
add dried noodles
boil for 5 mins, stir occasionally
drain then put the noodles in ice filtered water for a minute (u can skip this step)
then drain and rinse under cold filtered water
